M.S. Nutrition and Dietetics with an emphasis in Culinary Arts
The Master of Science in Nutrition and Dietetics with an emphasis in Culinary Arts prepares students who can successfully merge culinary nutrition skills with traditional business skills to develop innovative and successful entrepreneurial programs and services. The program is designed for professionals who have a baccalaureate degree in nutrition and culinary experience. Course work focuses on nutrition, sustainable food systems, entrepreneurship, finance, marketing and organizational management. Graduates are encouraged to seek Certified Culinarian credentialing, as warranted. Prepared for positions in all types of food service, with an emphasis on culinary arts and sustainable food practices, graduates also explore the impact of food policy on the food system. Opportunities to develop entrepreneurial endeavors related to nutrition and cuisine are provided.
Upon completion of the program, the graduate will:
- Integrate their culinary nutrition skills with traditional business techniques to develop entrepreneurial programs and services targeted to various niches of the local market.
- Demonstrate highly developed culinary skills, knowledge, and the ability to be successful in a variety of professional culinary job situations.
- Foster the development of skills, abilities and methods necessary for successful entrepreneurial practice within a variety of culinary areas.
The length of the program is 30 semester hours, depending on individual variations in education and experience. Study in the Culinary Arts program provides individual attention and close ties with culinary faculty as a result of entrepreneurial projects in culinary endeavors in the community. Students may pursue either full-time or part-time study. Most classes are offered late afternoon or evening, allowing employment flexibility.
If you are a registered dietitian, you can apply these courses toward your continuing education requirements. The Academy of Nutrition and Dietetics grants 45 Continuing Education hours for each three-credit-hour semester course.
