The Healthy Futures Cookbook includes recipes from church members and Saint Louis University staff, students and faculty. The recipes were analyzed for nutritional content by SLU dieticians, and each recipe includes tips for making healthier meals. "Not all these recipes are low fat, low sodium," said Joy Short, instructor in the department of nutrition and dietetics and project director. "However, each recipe is followed up by a nutrition tip to make the meal healthier. The recipes can be easily modified to lower fat and sodium content or increase fiber and other nutrients." The cookbook was funded by the American Dietetic Association as part of the Partnerships in Diversity Promotion campaign. Organizers are trying to enhance diversity in the field of nutrition and dietetics, encourage good nutrition and promote the value of going to college. Saint Louis University, San Francisco Temple Complex and Bethlehem Lutheran Church hope the cookbook and the healthy futures collaboration help build spirituality, mental development, physical health and cultural awareness. All of the money raised through the sale of the cookbook will be used for minority scholarships. In addition, a second book is available. Helpful Hints is 150 pages of tips for cooking, housekeeping and gardening. Both books are available through Saint Louis University for a minimum donation of $10. The Healthy Futures Cookbook can be purchased alone for a minimum donation of $7, and Helpful Hints is available for a minimum donation of $4. There is a $3 charge for shipping and handling.
