The program to feed the hungry began at Saint Louis University three years ago

The Campus Kitchens Project is gaining more national attention. The program’s founders Karen Borchert and Jessica Jackson are featured in the Thanksgiving issue of Family Circle magazine. The dedicated duo is included in the widely read magazine’s “Women Who Make a Difference” section.
Borchert and Jackson came to Saint Louis University to create the program in October 2001. Today the organization feeds hundreds of St. Louis' hungry citizens each week with the help of student volunteers, surplus food from residence halls and partnerships among a number of area organizations. Nationally, the Campus Kitchens Project now has six sites in operation.
The magazine also quotes Bernie Schaefer, a University development director who previously served as director of SLU’s Center for Leadership and Community Service. Schaeffer discusses the role the Campus Kitchen Project plays in volunteerism at the University.
This isn’t the first time the respected program has been highlighted by one of the nation’s leading news outlets. Last year, People magazine profiled Borchert and Jackson and their vision to help others.
The Campus Kitchens Project (CKP) is a growing network of Campus Kitchens that are hosted by universities across the country. Each Campus Kitchen shares dining hall kitchen space with host universities; partners with campus dining to recycle safe, usable food that would normally go to waste; and mobilizes college students and community volunteers to make and deliver meals to the community.
Campus Kitchens also engage volunteers in mentoring, companionship, nutrition education and culinary job training for clients. Volunteers' efforts don't stop at their clients' front doors: Companionship, education and mentoring opportunities have become integral parts of this program, whose motto is "Teach. Reach. Feed. Lead."
Family Circle is the nation’s eighth largest consumer magazine with more than 4.6 million readers. The Nov. 30 issue, which features Borchert and Jackson, is available at newsstands everywhere, including the Saint Louis University Bookstore in Busch Student Center.
