Variety of Rotation Sites
Saint Louis University's internship provides a large variety of rotation sites, making graduates highly confident in their ability to apply to many entry-level jobs. Each two-week rotation develops an intern's time management and organizational skills as they must acclimate themselves to each new rotation site, remain motivated and on-task to fulfill rotation assignments. SLU interns become efficient and effective in professional practice because of the amount of flexibility required of them as they rotate to each new site every two weeks. Graduates of this program often credit a feeling of comfort and low-anxiety in new professional situations to this aspect of the SLU Dietetic Internship.
Nutrition Education in the Community
Dietetic Interns have the opportunity to develop and teach nutrition and gardening curriculum with local schools. Interns get a rounded and satisfying teaching experience when instructing children aged 7 to 14 from lesson plans they have written. Past Dietetic Interns placed organic gardens in a handful of public schools, allowing for enhanced nutrition education with the children.
Saint Louis University coordinates 30 credits into the dietetic internship. The courses are designed to align with internship rotations and most students feel they take classroom content directly into rotation sites, while also bringing clinical experiences back into the classroom- creating a unique experiential learning environment. Upon completing the Dietetic Internship, students will graduate with a Master of Science in Nutrition and Dietetics.
It is not always possible to gain experience at rotations sites in all areas of didactic practice. In an effort to enhance the learning experience of SLU Dietetic Interns, comprehensive workshops have been worked into the curriculum of the internship program. Days focused specifically on obesity, eating disorders, geriatrics, nutrition support, public policy, and ethics are just some sessions that take place on Mondays.
Commitment to Sustainable Food Systems
Since 1998, the Department of Nutrition and Dietetics has included a sustainable food systems curricular thread. Dietetic Interns have an opportunity to engage in community gardening projects, use local ingredients for cooking projects, teach gardening, recycling, and composting principles to students in public schools. Additionally, interns gain experience in organic gardening as they are responsible for maintaining the community garden on Saint Louis University's campus. Upon completion of the internship, students earn an Organic Gardening Certificate, creating an edge over other Registered Dietitians without these skills.
