Week 1 June 2-6
Tour of Latin American Cuisine: Let’s head south to Latin America to learn some traditional Mexican, Peruvian and Brazilian culinary techniques! If the popular Mexican rice and cinnamon beverage, Horchata or Peruvian stuffed pastries known as empanadas make your mouth water, join us for camp in Week 1.
Week 2: June 9-13
Tour of the Middle Eastern Cuisine: This week will focus on diverse cuisines of the Middle East such as those from Lebanon, Israel, Egypt, and Saudi Arabia. Roasted lamb, rice, pita bread, and hummus are a few favorites, as well as the rich strained yogurt sauce, lebneh, and stuffed cabbage leaves! Campers will explore foods that have been popular since the beginning of civilization.
Week 3: June 16-20 (Teen Week)
Classical French Cuisine and Culinary Competition: Learn new skills and put them to the test! In Week 3, our teen campers will make their way to becoming chefs by learning knife cuts, traditional French techniques, and even creating their own dishes. You will develop a great knowledge of the culinary world, but also flex your creative muscles.
Week 4: June 23-27
Regional America: Let's take a trip across the USA! From New England chowders to Louisiana creole; from southwestern BBQ to fresh California cuisine – this week campers will create foods both familiar and new as they explore the different regions of our nation.
Week 5: July 7-11 (Ages 5-8)
Let's Go On a Picnic! (Ages 5-8): This week will take campers on a trip around the world - one picnic at a time! Picnics are the perfect place to enjoy fresh fruits and vegetables. The campers will be spending more time in our garden both harvesting, preparing, and eating their picnic foods! From traditional sliders and potato salad to tzatziki and kabobs, our campers will be exposed to many ethnically diverse cuisines!
Week 6: July 14-18
Vegetarian Around the World: Hundreds of thousands of people all over the world abstain from eating meat for various personal, ethical, and religious reasons. This week will show campers that a vegetarian diet is both exciting and delicious! Beans, grains, vegetables, and fruits will shine this week as campers explore vegetarian dishes from all over the planet. This week, the nutrition education lessons will focus on how to be a healthy vegetarian.
Week 7: July 21-25
Exploring Italy from North to South: We’re starting camp off just right by digging in to some delicious Italian eats! If you’ve ever had a bowl of pasta on the Hill and wanted to know more about the culture and cuisine of Italy, then this is the week for you. There’ll be plenty of parmesan, fresh Italian vegetables and—of course—Tiramisu.
Week 8: July 28-Aug 1
Cuisine of the Caribbean Sea: St. Louis summers can get as hot as a tropical island! Luckily, the foods of Jamaica, Puerto Rico, Haiti and the Bahamas are just as satisfying and refreshing in the city as they are in the tropics. Join us for the final week of camp to experiment with tropical fruits, taste some Jerk chicken, and cool down with exotic ice cream.
