In 2022, Dr. Helton began research on food insecurity, revealing critical insights into local food access challenges. This research spurred a collaboration with Propel Kitchens, which provides nutritious, ready-to-eat meals to individuals and families facing food insecurity.
Driven by SLU's Jesuit mission of service, Dr. Helton's initiative has expanded into a robust program that not only supplies meals but also creates hands-on service opportunities for students and community members. By focusing on sustainable food access solutions, the project has become a vital support system for those in need and serves as a model for community-engaged research.
